John made his special sauce with meatballs for mother's day, well actually we will be having his oober wonderful lasanga tomorrow!

Making Hamburger Patties

John making hamburger patties using our LEM hamburger press, I really prefer my mom's old three piece tupperware press but alas that was the one thing I didn't get after she passed.  Dad says he has no idea where it made off to as  he really liked it as well.


Waxed paper is a must or you'll never get your patty out of the hamburger press.  John makes 6x6 inch pieces of waxed paper, he says it also helps to keep them seperated when frozen, and he's right they are WAY easier to seperated.


Thirty one five ounce meat balls waiting to be pressed into patties! A ten pound tube of 85% yields about 32 patties more or less.


And this is what they look like before they are put into freezer bags.  If you wanted to keep them a very long time then I recommend vacuum sealed bags, instead of freezer bags, to prevent freezer burn.

Brown Beef Slices in Au Jus




We browned the meat slices before adding to the jars, added water to the drippings in the pan and then added the juice to the jars.  These will be processed for 75 minutes at 10 pounds of pressure (I'm below 1000 ft).  Can't wait to have a French Dip with Au Jus sandwich!

Todays Activities

*5 quarts and 13 pints of pork loin in the pressure canner.
*Wash the outsides of 11 quarts of beef chili, label them, and find shelf space to store them on (ok that one may take a miracle). 11 in 121 seal rate not bad.
*Chinese for dinner, made by moi' of course!
*Rescue my wind beaten tomato plants, convince them they want to grow on the trellis' instead using tomato tape to reinforce that idea!
*Celebrate because I sold two art quilts today!!!
